Already in the Middle Ages, some documents attest that the territory of the Pisan Mountains was famous for the production of a high-quality olive oil and still today this product is an expression of local traditions.
The slopes of the mountains have gradually changed their appearance thanks to the work of man who built terraces for the plantation of olive trees and an efficient irrigation system, the mild climate and a particularly suitable soil allow the cultivation of the olive Frantoio , Moraiolo and Leccino.
The oil is produced from olives not yet mature, carefully selected during the traditional hand harvesting which takes place from October to November. Afterwards the olives are placed in airy boxes in small quantities and pressed within 48 hours after the harvest.
